🌱 Crispy Vegan Zucchini & Oatmeal Sticks

These golden, herb-packed sticks are made with zucchini, oats, and simple seasonings. They’re crispy on the outside, tender on the inside—and 100% plant-based. Great as a snack, appetizer, or light lunch!
📝 Ingredients (makes 12–15 sticks)
- 2 medium zucchinis (grated)
- 1 cup quick oats (or rolled oats, pulsed into a coarse flour)
- 2 tablespoons cornstarch (or potato starch)
- 2–3 garlic cloves (minced)
- 1 small bunch parsley or dill (chopped)
- 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
- 1/2 teaspoon turmeric (for color)
- Salt & black pepper to taste
- 1–2 tablespoons olive oil (for pan-frying or brushing if baking)
🍳 Instructions
- Prep the zucchini:
Grate the zucchini and place it in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. - Make the dough:
In a bowl, combine the zucchini, oats, starch, garlic, herbs, nutritional yeast (if using), turmeric, salt, and pepper. Mix well until it forms a soft, moldable dough. Let it sit for 5 minutes so the oats absorb moisture. - Shape the sticks:
Take small portions of the dough and roll them into sausage-like shapes (as seen in the top image). Slightly flatten them if desired. - Cook:
- Pan-fry: Heat a bit of oil in a non-stick skillet over medium heat. Cook the sticks for 2–3 minutes per side until golden brown and crispy.
- Bake (healthier option): Preheat oven to 400°F (200°C). Place sticks on a lined baking tray, brush lightly with oil, and bake for 20–25 minutes, flipping halfway.
- Serve hot:
Best enjoyed fresh with vegan yogurt dip, tahini sauce, or your favorite plant-based spread.
