🥢 Vegan Lo Mein
Perfect for parties or weeknight dinners!
Ingredients:
- 8 oz lo mein noodles (or spaghetti/ramen)
- 1 tbsp sesame oil (or any oil)
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1 cup mushrooms, sliced (like cremini or shiitake)
- 1 red bell pepper, sliced
- 1/2 cup shredded carrots
- 1/2 cup snap peas or green beans
- 2-3 green onions, chopped
- Optional: peanuts or cashews for crunch
Lo Mein Sauce:
- 3 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp maple syrup (or brown sugar)
- 1 tsp sesame oil
- 1 tsp rice vinegar
- Optional: 1 tsp sriracha or chili flakes (for heat)
Instructions:
- Cook the noodles according to package instructions. Drain and set aside.
- Make the sauce: Whisk all sauce ingredients in a bowl and set aside.
- Stir-fry veggies: Heat oil in a large skillet or wok over medium-high. Add garlic and ginger, sauté 30 seconds. Toss in mushrooms, peppers, and carrots. Stir-fry for 4–5 minutes until tender-crisp.
- Add noodles & sauce: Toss in cooked noodles and sauce. Stir-fry everything for 2–3 minutes until coated and heated through.
- Finish & serve: Add chopped green onions and optional nuts. Serve hot!

- Swap in tofu, tempeh, or seitan for added protein.
